Get Me Goin' Granola

Crunchy, nutty, chocolatey and full of fibre! This is how I like my granola and I promise that once your try this easy recipe you will never buy granola at a store again. It’s so simple yet highly nutritious and will energize you for the day ahead.

I love making my own granola and being in charge of all the ingredients that go in. This recipe is full of oats, nuts and seeds to provide enough protein, fibre and healthy fats to get you goin’ in the morning. I added cacao not only for the slightly chocolatey flavour but mostly because it’s super rich in antioxidants, iron and magnesium (necessary to maintain the health of your heart and reduce stress levels).

Another super food ingredient that I love using in my kitchen and is such an amazing addition to any breakfast are chia seeds. They’re a great source of omega-3 fatty acids, antioxidants, protein and fibre. All you need for a nutritious dense breakfast or snack on the go.

Get Me Goin’ Granola

Total time: 40 minutes | Servings: 1 big jar (2l / 8 cups)

Ingredients:
3 cups rolled oats
1 cup nuts, chopped (walnuts, cashews, almonds, pecans - use one kind or mix them up)
1/2 cup pumpkin seeds (or sunflower seeds or mix them both)
1/3 cup dried cranberries (you can use any dried fruit you like)
3 tbsp chia seeds + 6tbsp water
1/3 cup maple syrup (you can also use honey, agave, date syrup etc.)
1/3 cup smooth peanut butter
1/3 cup cacao
1/3 cup coconut oil

Instructions:
1. Preheat oven to 350 F / 175 C

2. Combine chia seeds and water in a small bowl and mix well. Set aside to thicken.

3. In a large bowl combine oats, pumpkin seeds, chopped nuts and dried cranberries.

4. In a small saucepan over low-medium heat melt coconut oil and peanut butter. Then add maple syrup, cacao and chia mixture. Whisk to combine until smooth.

5. Pour wet ingredients over dry and mix all together well.

6. Spread mixture out in an even layer onto a lined baking sheet and press firmly to ensure it’s compact. Bake for about 15 minutes then remove from oven, flip over in chunks and bake for another 5 - 10 minutes. Stir halfway through to avoid the edges to burn.

7. Let granola completely cool down before transferring to a jar.
