Chocolate Walnut Cups
Whether you’re looking for a last minute Christmas treat to make or simply craving something sweet and delicious, these babies will hit the spot. They’re super easy to put together with only a few ingredients that you most likely already have in your pantry.
The Chocolate Walnut Cups are a popular Slovak Christmas dessert that is a staple in every family. I remember making these with my grandma when I was a child. This year I thought I would add a little twist to them by creating a vegan version that is just as satisfying.
Normally when you see these types of chocolate cups, the filling is made from peanut butter (hello famous Reese’s). This recipe is a little different as it uses walnuts and I promise you’ll love this small but delicious change.
Done before you know it
You start by melting the chocolate with a little bit of coconut oil and then pouring a small amount of melted chocolate on the bottom of your cups. Pop the cups into the fridge (or freezer if you’re in a hurry) and in the meantime prepare the walnut filling. Let it cool off and then scoop the filling into the prepared cups. Cover with another layer of chocolate, put back in the fridge and you’re done.
That’s how simple it is so you can spend more time with your family watching Christmas movies rather than standing in the kitchen all day. That’s the kind of Christmas ‘baking’ I love. Anyone with me?
The walnut filling
As I mentioned, this is the main difference between the chocolate cups out there and these little beauties. You need to grind your walnuts first until they’re very fine then you add them to a small pot together with some coconut milk, coconut sugar and coconut oil. You cook it all together for a few minutes until a semi thick mixture is formed. And if you’re feeling super festive, feel free to add a drop of rum (whiskey or cognac will do too). I sure did:)

Chocolate Walnut Cups
Total time: 30 minutes | Servings: makes 15 small cups
Ingredients:
For the filling:
1 heaping full cup walnuts
1/3 cup coconut sugar
1/4 cup coconut milk
2 tbsp coconut oil
1/2 - 1 tbsp rum (optional; you can also use whiskey or cognac)
Pinch of salt
1/2 tsp vanilla extract
For the chocolate coating:
1 good quality chocolate bar with a high amount of cacao (100g)
2 tbsp coconut oil
Note: this recipe makes about 15 small cups. My paper cups were 1.4 inch wide (35mm). Feel free to use larger cups if you prefer. You can also easily double up the whole recipe to make extra cups.
Instructions:
1. Start by grinding/mixing your walnuts until very fine and set aside.
2. In a bath (fill one pot with water, place another pot or bowl on top of it and put on the stove ) melt your chocolate together with coconut oil.
3. Lay your paper cups on a try and start by pouring a little bit of melted chocolate to cover the bottom of the cups. Pop the tray with your cups in the fridge for about 15 minutes (or freezer) to harden.
4. In the meantime prepare your walnut filling. Add all the filling ingredients to a small pot. Put the pot on the stove and turn to medium low heat. Cook the mixture for about 5 minutes stirring the whole time. The filling should be about as thick as oatmeal. Once done let it cool off completely.
5. Take your paper cups out of the fridge and add about a small spoonful of walnut mixture to each cup. Then press the mixture gently down with your finger to smooth it out.
6. Lastly pour about one tablespoon of melted chocolate on top of each cup until the walnut mixture is covered evenly. If you like you can sprinkle the cups with crushed nuts or seeds. Pop the tray back in the fridge and wait until all settled. Enjoy!
Note: Store your cups in the refrigerator for about 1 week or in the freezer up to 1 month.
