Easy Banana Oat Pancakes
Nothing says Sunday morning better than a stack of fluffy pancakes slathered in maple syrup. If you’re looking for an easy recipe that makes light, tender and naturally sweet pancakes, you’re in the right place. This 1-bowl recipe requires only 8 simple ingredients you likely have on hand right now.
Easy Banana Oat Pancakes
Total time: 20 minutes | Servings: makes 9 pancakes
Ingredients:
1 large ripe banana
2/3 cup oats
1/3 cup flour
1 tbsp ground flax seeds + 2 tbsp water
1 cup plant based milk
1/2 tsp baking powder
Pinch of salt
Coconut oil for frying
Optional pinch of cinnamon and/or drop of vanilla extract
Instructions:
1. Mix ground flax with water and set aside to thicken.
2. In a large mixing bowl mash your banana, then add milk and thickened flax “egg”. Mix well.
3. Grind your oats until very fine and add to the mixture together with flour, salt and baking powder. If using cinnamon or vanilla, also add it now.
4. Preheat your pan to medium-high heat, add about 1/2 a tablespoon of coconut oil. Wait until the oil is hot before you start frying your pancakes.
5. Once hot, spoon about 1/4 - 1/3 cup of the batter onto skillet (I can fit 3 pancakes onto my pan). Cook until you see small bubbles on the surface of the pancakes, about 3 minutes. Then gently flip over and cook on the other side for another 3 minutes. You’re looking for a golden brown colour.
6. Serve warm with your favourite toppings. I love maple syrup and berries:)
